The color of the curry paste—green, red, yellow comes from the color of the chili pepper (as well as other ingredients) used to make the paste. Each color paste has its own unique flavor and level of spice, green is usually the milder of the curry pastes, while red is usually the hottest and yellow falls somewhere in between.
Green curry is usually the brightest colored and the more popular curry used in Thai dishes. It is also the most distinct flavored curry from that of other countries. Nowadays, chefs will add other ingredients with a green hue to enhance it’s color and not rely just on the color of the green chile, such as fresh cilantro, basil, and kaffir lime leaf. Yellow Curry uses Turmeric as the main ingredient, similar to Indian curry but still with its own unique Thai flavor; mildly sweet and slightly spicy. Red Thai curry paste has stayed pretty much the same over the years. Thai chefs use to use around 20 red chilies in order to obtain the spicy and color to give it that traditional red color and spice. Modern chefs have elected to use chili powder instead of large numbers of red chilis to achieve a deeper flavor while still keeping the dark red color.
